The first time I fried potato balls, I have no experience. The oil temperature is really difficult to control. The fried ones are a bit over-fried and the color is very dark, but I like it~

Ingredients
- 500 g potato
- 5 g Black pepper
- 20 g starch
- 5 g salt
- Shallot
Instructions
- Materials ready
- Chopped green shallot and set aside
- Peel and cut potatoes, steam over high heat for 15-20 minutes
- The steamed potatoes are pressed into a puree while hot
- Then add salt and pepper
- Add cornstarch and mix well
- Well mixed
- Roll the mixed mashed potatoes into a ball size (be patient~~)
- Put enough oil in the pot (it’s better if it hasn’t passed the balls), heat to the 8th or 9th layer, then add the balls
- Fried on high fire until the meatballs change color, then they can be fished out. Finally, sprinkle some chopped green shallot and eat with them. The taste is not so greasy~
Notes
The potatoes must be steamed soft and well-ripe, and pressed as finely as possible. The pressed mashed potatoes will naturally have a kind of stickiness. The purpose of adding starch is to make the mashed potatoes better shape and not easy to disperse during frying.
