How to cook Cantonese-style bacon – It’s a good time to dry bacon
[Cantonese-style bacon] It's a good time to dry bacon
After I came to New Zealand, I missed the taste of my hometown, and I also made bacon by myself. It's just that the seasons in the southern hemisphere are reversed from those in China, and the domestic winter is our summer. These bacons were made during the winter in New Zealand, and considering that it was the height of summer in China, they were not delivered. Now it is midwinter in the country, and it is a good time to dry bacon. Try drying bacon at home, it's a fragrant!

Ingrédients
- 5000 g Pork belly
- 100 g White sugar
- 60 ml thick soy sauce
- 150 g salt
- 300 ml thin soy sauce
- 100 ml rice wine
Instructions
- Cut the pork belly into strips, put it in a large container (I used a large steel pan), pour all the seasonings in and mix well. Marinate for one day, turn over and marinate for another night, about 24 hours. (The marinating time is relatively long, in order to let the meat fully absorb the taste of the marinade)
- Pierce a hole at one end of the meat, put it on a string, and hang it to dry in a sunny place
- Hang it in a sunny and ventilated place every day. Take it back when it gets dark and put it away to avoid dew
- After a few days
- Exudes bursts of fragrance! !
- Bacon and mushrooms, dried shrimps
- After frying, the fat will become transparent, and it will be crispy when you bite. It is really delicious!
Notes
Cantonese bacon can be used for many dishes. It is directly sliced and steamed, fried cauliflower, radish cake, claypot rice, etc. In short, bacon is indispensable for warm heart and stomach dishes in winter!
