Instructions
Wash the eggplant and cut into chunks
Add a little salt and stir well (this step is very important) and let stand for 15 minutes
Chop garlic into a bowl, a spoonful of light soy sauce + a spoonful of oyster sauce + a spoonful of sugar + a little starch + water, stir and mix well
Squeeze the marinated eggplant to dry the excess water by hand
Add a spoonful of starch and grab it by hand
Stir fry in hot oil
Pour in the sauce just made, stir fry ~ then cover the pot and simmer for a while
Add the shallots and stir fry until the juice is collected
Serve it, and the braised eggplant is ready
Notes
